It answers by the formula C18H34O2, which corresponds to the mono-carboxylic straight-chain acid with 18 carbon atoms and a double “cis” link in 9th position. It has a minimum purity of 65%. It is a liquid oil that is insoluble in water.

Origin and extraction of Oleic Acid
