What are tallow fatty acids?
Tallow fatty acids are a family of fatty acids derived mainly from animal fat, more particularly of bovine origin. These acids are a mixture of saturated fatty acids (as myristic, palmitic and stearic) and unsaturated (such as palmitoleic, oleic and linoleic).
Such acids can be marketed retaining the same fatty acid distribution of tallow, or can be performed prior to distillation partial hydrogenation that increases the stability of the product. Depending on their use and application we will opt for one or the other.
For total hydrogenation prior to distillation, animal stearic acid is obtained. Other fatty acids present in smaller amounts are:

- Stearic acid (1-3%)
- Oleic acid (4-7%)
- Linoleic acid (5-8%)
- Linolenic acid (0-2%)

Origin of tallow fatty acid and how it is obtained
It is obtained by pressing and/or solvent extraction from the seeds of the shrubby castor bean plant (Ricinus communis), native to the Mediterranean basin, but distributed worldwide and extensively exploited globally. The seeds contain ricin, a potent plant toxin that is easily extracted due to its water solubility.
Applications, uses and properties of ricinoleic acid
Tallor fatty oil is a very pale yellow liquid at room temperature. It has a very characteristic and unpleasant odour and taste.
The multiple uses of ricino oil make it one of the star ingredients in a variety of industries that use oleochemicals.
Ricinoleic acid, thanks to the particularity of the presence of its hydroxyl functional group, has a higher polarity than any other similar fatty acid, as well as an obvious higher reactivity. It is also a fatty acid that can be derived much more easily.
